The Palakkadan Matta Rice is famed for its unique flavor and brown color. Bold grains with red pericarp ensure higher nutritional and fiber content presence. It is grown in the dense black cotton soil of the Palakkad district. The rice has a distinct earthly flavor because of the type of soil in which it is cultivated. These paddy fields are called 'poonthalpadam' and the soil contains a lot of clay and silt. Because of these qualities, this kind of paddy field can retain more water.

The rice has a distinctive flavor. The red pericarp on the coarse rice alone offers a high nutritional content. The nutritional value of the rice is further preserved by par-boiling it. The grains are produced on black cotton or regar soil that comes from lime-rich rocks that are unique to Palakkad. The soil is also found in Poonthalpadam, where it contains 60 to 80 percent clay and silt, has low permeability, and has a high water-holding capacity.

Palakkadan matta rice is more nutrient-dense than white polished rice. 160 calories and 1 gram of fiber may be found in one serving cup that is 1/4 size. Matta rice's brown outer coating,which is filled with nutrients, is polished away to produce white rice. One gram of calcium and 84 milligrams of magnesium can both be found in one cup of Matta rice. Palakkadan Matta rice is registered under the Geographical Indications of Goods (Registration & Protection) Act, 1999,by the Palakkad Matta Farmers' Producer Company Ltd in 2007.
